Chop Chop Today: Saving the lives of Women who cannot cook !!!
Beans can be eaten in different ways. Today our focus will be Moi Moi or as it’s called bean pudding by some people.
The Recipe
Firstly, wash your beans. Make sure there is no chaff left on the beans.
The next step is putting all ingredients together, which includes onions, fresh peppers or sometimes bell peppers, seasoning, salt, palm oil or vegetable oil, cray fish, eggs, fish or anything that you want to put in the moi moi. Wash the bell peppers and onion, blend it together with the beans along side crayfish.
After it is blended, it should be very soft and smooth, after which you add salt, dried pepper (optional), palm oil or vegetable oil and seasoning. Mix ingredients well with the mixture.
There are different ways of wrapping moi moi. For some they use white nylon, others green leaf (Ewe Eran leaves), or cans of milk; but we are using the “tooshed” one- foil.
Then add the boiled eggs, fish, vegetables and any other thing you want to add to the moi moi.
Here is where the magic is done. Most people are accustomed to boiling their wrapped moi moi by allowing it to steam and cook; but we are baking our moi moi. Please o!!! Don’t go and bake a leaf wrapped moi moi!!!
Put the moi moi in the oven and set it at 60, then leave it to bake depending on the mixture. It is advised not to make the mixture watery but a little bit thick.
Serve depending on how you want it to be presented. If you are the type that can eat from the foil; feel free and have a blast. But here are illustrations on how we served ours.
